Equipment

  • 1 Large Skillet
  • 1 baking dish

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup prepared queso, divided
  • 6 fajita-size flour tortillas
  • 2 cups shredded Mexican-blend or cheddar cheese
  • 1 cup pico de gallo, for topping
  • Optional: Sour cream, sliced jalapeños, cilantro, or your favorite taco toppings

Instructions

  • Preheat the oven to 375°F.
  • Brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Drain any excess grease, then prepare the taco meat according to your preferred method using taco seasoning.
  • Stir 1 cup of queso into the cooked taco meat until everything is well combined and creamy.
  • Cut each fajita-size tortilla in half. Lightly grease a 9×13-inch baking dish, then arrange the tortilla halves around the edges with the straight cut side facing outward.
  • Add a layer of the cheesy taco meat, followed by a layer of shredded cheese.
  • Repeat the layers with tortillas, cheesy taco meat, and shredded cheese until all of the ingredients are used, finishing with a layer of shredded cheese on top.
  • Bake uncovered for 15–20 minutes, or until the casserole is heated through and the cheese is completely melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Drizzle with additional warm queso and top with pico de gallo.
  • Slice and serve warm with your favorite taco toppings.
