Equipment
- 1 9×13-inch Baking Dish
- 1 Baking sheet (for crisping popcorn chicken)
- 1 Small saucepan or microwave-safe bowl (for warming gravy)
Ingredients
- 1 bag (about 24 oz) frozen popcorn chicken
- 4 cups prepared mashed potatoes, instant mashed potatoes work great
- 1 can (16oz) baked beans
- 1 can, 15 oz corn, drained
- 1 1/2 cups shredded cheddar cheese
- 1 jar (12 oz) chicken gravy, warmed
- BBQ sauce, optional, for drizzling
Instructions
- Heat oven to 400°F. Cook the frozen popcorn chicken according to the package directions until hot and crispy.
- Spread the prepared mashed potatoes evenly in the bottom of a greased 9×13-inch baking dish.
- Spoon the baked beans over the potatoes in a fairly thin, even layer.
- Sprinkle the drained corn over the beans, followed by about 1 cup of the shredded cheddar.
- Arrange the crispy popcorn chicken over the top. Sprinkle with the remaining 1/2 cup cheddar.
- Bake for 15-20 minutes, until the casserole is hot throughout and the cheese is melted.
- Warm the chicken gravy and drizzle it over the casserole just before serving. Add a light BBQ sauce drizzle if you want a sweeter, smoky finish.
Meals & Munchies Tip: Crisp the popcorn chicken separately before adding it to the casserole. That keeps the chicken crunchy instead of letting it get soft while the layers heat through.
