Equipment
- 1 Crockpot
- 1 Stand mixer, for shredding the chicken
- 1 baking sheet, for the tater tots
Ingredients
For the BBQ Chicken
- 3 lbs boneless, skinless chicken breasts
- 2-3 tbsp all-purpose seasoning or BBQ rub
- 1½ cups barbecue sauce
- ¼ cup water, optional
For Loaded BBQ Chicken Tater Tots
- tater tots
- Queso, homemade or store-bought
- Pico de gallo, for topping
Instructions
- Place the chicken breasts in a 6-quart slow cooker.
- Sprinkle the chicken evenly with the all-purpose seasoning or BBQ rub.
- Pour the barbecue sauce over the chicken, making sure the tops are well covered. Add a small splash of water if desired.
- Cover and cook on LOW for 5–6 hours or HIGH for about 3 hours, or until the chicken reaches an internal temperature of 165°F and is tender enough to shred.
- Remove the cooked chicken and shred it using two forks or place it in a stand mixer and mix briefly with the paddle attachment. Return the shredded chicken to the BBQ sauce and juices in the slow cooker.
For BBQ Chicken Tater Tots
- Arrange cooked tater tots on a baking sheet or oven-safe dish. Top generously with shredded BBQ chicken and drizzle with queso.
- Bake at 400°F for about 15 minutes, or until the chicken is hot and the queso is melted and bubbly.
- Top with fresh pico de gallo and serve immediately.
Don't add too much water. The chicken releases quite a bit of liquid as it cooks, so you only need a small splash to help get things started.
