Equipment

  • 1 Crockpot
  • 1 Frying Pan

Ingredients

  • 2 Chicken Breasts
  • Taco Seasoning, To Taste
  • 1 4oz Can Green Chiles
  • 16oz Queso Blanco Velveeta
  • 12 Tortillas

Instructions

  • To a Crockpot, add 2 chicken breasts, taco seasoning, green chiles, and Queso Blanco Velveeta.
  • Cover and cook on high for 4 hours.
  • When it's done, shred the chicken with a fork and mix all the ingredients together.
  • Add the filling from the Crockpot to your tortillas. It should be able to fill 10-12 tortillas.
  • Roll the tortillas and add to an oiled pan and fry briefly to make the outside crispy.
  • When done, I garnished mine with some queso fresco and cilantro, but this is optional.
I also took the left-over cheese and microwaved it and made a white queso Ro-Tel dip to pour over it, this is also optional.
