Equipment

  • 1 Large rimmed sheet pan
  • 1 Small Saucepan
  • 1 mixing bowl (optional)

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1½ lbs baby potatoes, halved
  • 8 oz sliced mushrooms
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 jar, 12 oz chicken gravy
  • Fresh parsley, optional, for garnish

Instructions

  • Preheat the oven to 425°F.
  • Place the halved baby potatoes, mushrooms, and sliced onion on a large rimmed sheet pan. Toss with 1 tablespoon of olive oil and a small pinch of salt and pepper.
  • Pat the chicken thighs dry with paper towels and rub them with the remaining 1 tablespoon of olive oil. In a small bowl, combine the garlic powder, onion powder, paprika, salt, and black pepper. Season the chicken thighs evenly on all sides.
  • Place the chicken thighs skin-side up over and around the vegetables, making sure everything is spread out in an even layer.
  • Bake for 40–45 minutes, stirring the vegetables once halfway through, until the potatoes are tender and the chicken is cooked through. The chicken should reach an internal temperature of 165°F.
  • While the chicken is finishing, heat the chicken gravy according to the package directions. Do not add anything to the gravy.
  • Transfer the roasted chicken, potatoes, mushrooms, and onions to plates. Spoon the warm chicken gravy generously over everything. Garnish with fresh parsley, if desired.
