Equipment

  • 1 Mixing bowl
  • 2 Large Sheet Pans (one for baking, one to keep everything pressed down)
  • Pastry brush (if using melted butter)

Ingredients

  • 3 cups shredded rotisserie chicken
  • 8 large flour tortillas
  • 3 cups shredded Mexican-blend or cheddar cheese
  • 1/2 cup salsa
  • 1 small can diced green chiles, drained, optional
  • 1 tsp taco seasoning
  • Cooking spray or melted butter

For Serving:

  • Sour cream
  • Salsa
  • Guacamole
  • Ranch, optional

Instructions

  • Heat oven to 425°F.
  • Mix the rotisserie chicken with the salsa, taco seasoning, and green chiles if using.
  • Lightly grease a large sheet pan.
  • Arrange 6 tortillas around the edges, overlapping so about half of each hangs over the sides. Use the remaining tortillas to cover the center.
  • Sprinkle half the cheese over the tortillas. Add the chicken mixture, then top with the remaining cheese.
  • Fold the overhanging tortillas toward the center to cover the filling completely. Patch any open spots with another tortilla if needed.
  • Brush or spray the top lightly with butter or oil. Place a second sheet pan on top to keep everything pressed down.
  • Bake for 15 minutes. Remove the top pan and bake another 5–8 minutes, until golden and crispy.
  • Rest for 5 minutes, then cut into small squares or triangles and serve with dipping sauces.
  • Game Day Tip: Don't overdo the salsa. Just enough moisture keeps the chicken flavorful without making the quesadillas soggy.
