Baked using two sheet pans for maximum crispness, this easy recipe feeds a crowd with minimal effort and pairs perfectly with burger sauce, ranch, salsa, or sour cream!
Equipment
- 1 Skillet (for browning beef)
- 2 2 Large Sheet Pans (one for baking, one to weigh down top)
- 1 Pastry brush (if using melted butter/oil)
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning or 2 tbsp burger seasoning
- 8 large flour tortillas
- 2 cups shredded cheddar or Mexican-blend cheese
- 1/2 cup diced pickles
- 1/4 cup diced onion, optional
- Cooking spray or melted butter
For Serving:
- Burger sauce
- Ranch
- Salsa
- Sour cream
Instructions
- Heat oven to 425°F.
- Brown the ground beef in a skillet and drain. Stir in the seasoning.
- Lightly grease a large sheet pan.
- Arrange 6 tortillas around the edges of the pan, overlapping them so about half of each tortilla hangs over the sides. Place the remaining tortillas in the center to cover any gaps.
- Sprinkle half of the cheese over the tortillas. Add the seasoned beef, pickles, and optional onion. Top with the remaining cheese.
- Fold the overhanging tortillas toward the center to completely cover the filling. Use another tortilla to patch any open spots if needed.
- Brush or spray the top lightly with butter or oil. Place a second sheet pan on top to weigh the quesadilla down.
- Bake for 15 minutes. Carefully remove the top sheet pan, then bake another 5–8 minutes, until golden and crispy.
- Rest for 5 minutes, then cut into small squares or triangles. Serve with your favorite dipping sauces.
Game Day Tip: Cut these into small squares and pile them on a platter with burger sauce in the center for dipping. They feel more like finger food than traditional quesadilla wedges.
