Equipment

  • 1 skillet

Ingredients

  • 1 tbsp oil
  • 12 oz smoken sausage, chopped
  • .5 white onion, chopped
  • 1 zucchini
  • 2 cups spinach, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 10 oz Ro-Tel can, do not drain
  • 8 oz cream cheese
  • 1.5 cups uncooked long-grain white rice
  • 2 cups low-sodium chicken broth

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and chopped onion.
  • Stir in the chopped zucchini and spinach. Continue cooking for another 3–4 minutes until the vegetables are slightly tender and the sausage has good color.
  • Season to taste with garlic powder, onion powder, and smoked paprika.
  • Add the can of Ro-Tel (do not drain) and the cream cheese. Stir until the cream cheese is fully melted and a creamy sauce forms.
  • Add the uncooked rice and chicken broth. Stir thoroughly to ensure the rice is evenly distributed and fully coated in the sauce.
  • Bring the mixture to a gentle simmer. Once simmering, reduce the heat to medium-low, cover, and cook for 25 minutes, stirring once halfway through, until the rice is tender and has absorbed most of the liquid.
  • Remove from heat, fluff the rice gently, and serve hot.

Very good! We got back from vacation and luckily I already had all these ingredients on hand. Hadn’t made it to the grocery store yet. I’ve made the recipe twice now. I cheated both times and used frozen, chopped onions. 😊 and the 2nd time I made it, I increased to 3 cups broth, and the rice cooked better that time.

I remember, being a young mom with kids and teaching full time or part time …. And then later as a widow with 2 teenagers and 4 Sports a year athletes!
Tried this and took to my cousin to share for dinner. Big hit !

So yummy! I’m actually planning to do this one within the next week since I have a bunch of smoked sausage. Great recipe to use it in! @NDL_xo
