Equipment

  • 1 Crockpot

Ingredients

  • 1½ to 2 lbs pork tenderloin, plain or preseasoned
  • 1½ lbs baby potatoes
  • 2 tbsp sliced butter
  • 14.5 oz low-sodium chicken broth, or a small can
  • 5.2 oz garlic and herb Boursin cheese
  • 2 cups chopped vegetables , e.g., Brussels sprouts, carrots, or green beans
  • Salt and pepper, to taste
  • Optional: additional seasonings such as garlic powder, onion powder, or paprika

Instructions

  • Lightly grease the inside of your slow cooker with cooking spray or a small amount of oil.
  • Add the chopped baby potatoes to the bottom of the crockpot and top with sliced butter. Season lightly with salt, pepper, and any preferred seasonings.
  • Place the pork tenderloin on top of the potatoes. If using an unseasoned tenderloin, generously season both sides with salt, pepper, and optional spices of your choice.
  • Scatter the chopped vegetables evenly around the pork.
  • Pour the chicken broth over the ingredients. Add the Boursin cheese directly on top of the pork.
  • Cover and cook on high for 4 hours or low for 6–8 hours, until the pork is tender and the potatoes are cooked through.
  • Gently stir the contents to incorporate the melted Boursin into the broth for a creamy finish. Slice the pork and serve with the potatoes and vegetables.
