Equipment
- 1 Large Bowl
- 1 8×8 Baking Dish or Muffin Tin
- 1 Electric Hand Mixer
Ingredients
- 15 oz can black beans, drained, rinsed, and thoroughly patted dry
- 4 tbsp unsalted butter, melted
- 2 large eggs
- ½ cup pure maple syrup
- ⅓ cup unsweetened cocoa powder
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp salt
- 1 scoop (about 30g) chocolate protein powder
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper. If making brownie muffins, grease a 12-cup muffin tin or line with paper liners.
- Add the black beans, melted butter, eggs, maple syrup, cocoa powder, vanilla extract, baking powder, salt, and protein powder to a large mixing bowl.
- Using an electric hand mixer, blend until the batter is smooth and creamy. For the smoothest texture, you can also use a food processor or blender.
- If using chocolate chips, gently fold them into the batter.
- Pour the batter into the prepared baking dish and spread it into an even layer. If using a muffin tin, divide the batter evenly among the cups.
- Bake for 20–22 minutes in an 8×8 pan or 16–18 minutes for brownie muffins, until the center is just set and a toothpick inserted near the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for at least 15 minutes before slicing. They become even fudgier as they cool.
