Equipment

  • 1 Crockpot
  • 1 Large Bowl

Ingredients

  • 2 lbs Ground Beef
  • 2 Large Eggs
  • 1-2 packets Onion Soup Mix, (use 1 for less salt, 2 for bolder flavor)
  • 1/2 cup Milk
  • 1/2 cup Ketchup
  • 1/2 cup BBQ Sauce
  • 2 tbsp Worcestershire Sauce
  • 1½ cups Crushed-up Ritz Crackers
  • 3-4 cups Green Beans , fresh or frozen
  • For the Glaze:
  • 1/3 cup Ketchup
  • 1/3 cup BBQ Sauce

Instructions

  • In a large bowl, add: Ground beef, Eggs, Onion soup mix, Milk, Ketchup, Barbecue sauce, Worcestershire sauce, Crushed crackers.
  • Mix gently with your hands or a spoon just until combined. Don’t overmix or the meatloaf can become dense.
  • Shape the mixture into a firm loaf shape (oval or round) that will fit inside your slow cooker.
  • Add green beans to the bottom of the slow cooker in an even layer.
  • Place the formed meatloaf directly on top of the green beans.
  • In a small bowl, mix together: ⅓ cup ketchup & ⅓ cup barbecue sauce. Spread evenly over the top of the meatloaf.
  • Cover and cook: LOW for 6–7 hours (best texture) or HIGH for 3–4 hours. The meatloaf is done when the internal temperature reaches 160°F.
  • Carefully lift the meatloaf out (two spatulas help). Let it rest for 10 minutes before slicing so it holds together.
  • Optional: Cook alongside Reser's mashed potatoes. Cook according to the package instructions.
