Equipment
- 1 skillet
- 1 baking sheet
Ingredients
- 1 lb Ground Chicken, 1lb of ground chicken makes 15 tacos, so customized as you see fit depending on how many tacos you're making.
- 12 tbsp Lime Juice
- 1 oz Taco Seasoning
- Tortillas, as many as needed
- 15 oz can Refried Beans, exact amount depends on how many tacos
- 1 1/2 cups Shredded Cheese, exact amount depends on how many tacos
- Cooking Oil Spray
Instructions
- Preheat your oven to 400°F.
- In a skillet over medium heat, cook the ground chicken until no longer pink, breaking it apart as it cooks. Add the lime juice and taco seasoning, stirring until the chicken is evenly coated and cooked through. Remove from heat.
- Place the corn tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for about 40 seconds to soften. Arrange them on a baking sheet. Lightly spray or brush both sides of each tortilla with oil.
- Spread a thin layer of refried beans over one half of each tortilla. Spoon the seasoned chicken over the beans, then sprinkle with cheese.
- Fold the tortillas in half and press gently so they hold their shape. Bake for 12 minutes, flip each taco, and bake for another 12 minutes, or until crispy and golden.
- Enjoy warm, with your favorite toppings like salsa, guacamole, or sour cream.
I love all the easy recipes! As a single mom this is exactly what I need. I appreciate you @mislisamarie
I have to say, this is one of my family’s favorite recipes—one of many from you, actually! My husband even thought I bought the tacos from Costco. 😂
What I love most about your recipes is how well they fit our lifestyle. We’re a busy family of five, so quick meals with minimal ingredients work perfectly for our weeknight schedule.
