Equipment

  • 1 9×13-inch Baking Dish
  • 1 Large Skillet

Ingredients

  • 1 lb ground beef
  • 1/2 small onion, diced
  • 15 oz can sloppy joe sauce
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 bag (about 28-32 oz) frozen tater tots
  • Salt and black pepper, to taste
  • Optional: sliced pickles or chopped green onions for serving

Instructions

  • Heat oven to 400°F. Lightly grease a 9×13-inch baking dish.
  • Brown the ground beef and onion in a large skillet over medium heat until the beef is cooked through. Drain excess grease.
  • Stir in the sloppy joe sauce. Season lightly with salt and pepper if needed, then simmer for 2-3 minutes.
  • Spread the sloppy joe mixture evenly in the baking dish. Sprinkle 1 cup of the cheddar over the beef.
  • Arrange the frozen tater tots in a single layer over the cheese.
  • Bake uncovered for 30-35 minutes, until the tots are golden and crisp. Sprinkle the remaining 1/2 cup cheddar over the top and bake 5 more minutes, until melted.
  • Let rest 5 minutes before serving. Add pickles or green onions if you like.
  • Make it extra cheesy: Add another 1/2 cup cheddar under the tater tots, or mix in a few cubes of Velveeta with the sloppy joe filling.
