Equipment

  • 1 Large rimmed sheet pan

Ingredients

  • 1½ lb sirloin steak, cut into 1-inch pieces
  • 1½ lb baby gold potatoes, quartered
  • 1 lb fresh green beans, trimmed
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 3 tbsp olive oil, divided
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp garlic powder, plus extra for green beans
  • Salt and black pepper, to taste
  • ¼ cup grated Parmesan cheese
  • Chopped fresh parsley, optional

Instructions

  • Preheat oven to 425°F. On a large rimmed sheet pan, toss quartered potatoes with 2 tbsp olive oil, paprika, 1/2 tsp garlic powder, salt, and pepper. Spread out in a single layer.
  • Roast for 20–25 minutes, flipping once, until beginning to turn golden and nearly tender.
  • While potatoes roast, pat steak dry. Mix melted butter, garlic, and Italian seasoning. Toss steak with half the garlic-butter mixture, plus salt and pepper. Toss green beans with remaining 1 tbsp olive oil, a pinch of garlic powder, salt, and pepper.
  • Move potatoes to one side, then add steak and green beans in separate single layers. Return to the oven for about 8–10 minutes, or until green beans are tender-crisp and steak reaches your preferred doneness. For food safety, the USDA recommends 145°F followed by a 3-minute rest for whole cuts of beef.
  • Warm the reserved garlic butter separately, if needed, and drizzle over the finished steak and vegetables. Sprinkle with Parmesan and parsley. Serve immediately.
  • Use a roomy sheet pan so the ingredients roast instead of steam. If crowded, use two pans.
Steak cooks quickly; start checking early. Cooking time varies with the size of the pieces.
For crispier potatoes, cut them into similar-size pieces and place cut sides down.
If reserved garlic butter has touched raw steak, bring it to a boil before using it as a finishing sauce.
