Equipment
- 1 Crockpot
- 1 Stand or Hand Mixer
- 1 Griddle Pan
Ingredients
- 2 lb Pork Tenderloin
- BBQ Rub, to taste
- Pork Rub, to taste
- 2 1/2 cups BBQ Sauce
- 1/4 cup Water
- 1/2 Onion, sliced
- Bread, sliced
- 2 tbsp Mayonnaise, per sandwich
- 4-6 slices White Cheddar Cheese, per sandwich
Instructions
- Lightly grease your Crockpot.
- Place the pork tenderloin in the Crockpot. Season generously with BBQ rub or your preferred pork seasoning.
- Pour in about 1½ cups of BBQ sauce and a splash of water. Layer the sliced onions on top of the pork.
- Cover and cook on high for 4 hours or low for 6-8 hours, until the pork is tender and pulls apart easily.
- Remove the pork from the Crockpot and shred it using a hand mixer, or a stand mixer. As you shred, mix in about 1 cup of additional BBQ sauce for added moisture and flavor.
- Spread mayonnaise on one side of each bread slice (this helps create a crispy, golden crust). On the other side, layer white cheddar cheese slices and a generous scoop of the pulled pork. Drizzle a bit more BBQ sauce over the pork, then top with another few slices of cheese and the second slice of bread (mayo side out).
- Heat a griddle or skillet over medium heat. Place the sandwich on the griddle and cook until the bread is golden brown and the cheese is melted, flipping once (about 3–4 minutes per side).
- Slice in half and serve hot.
Yum!
I’m such a huge fan of anything grilled cheese😅
You were actually the inspiration for me to start doing this with my leftovers of pulled pork from nights before, but I usually substitute the pork with chicken.
I’ve been craving this for a couple weeks.. might have to make some soon!
