Equipment
- 1 Large Bowl
- 1 9×12 baking dish
Ingredients
- 8 oz can Crescent Roll Dough
- 1 Rotisserie Chicken, shredded
- 1.25 oz packet Taco Seasoning
- 10 oz can Ro-Tel
- 15 oz can Corn, drained
- 10.5 oz can Cream of Chicken Soup
- 7.5 oz container Chive & Onion Cream Cheese
- 1 Green Bell Pepper, diced
- 3-4 Green Onions, sliced (reserve some for garnish)
- 1/3 cup Enchilada Sauce
- 1/2 – 2 cups Shredded Cheese
- 1-2 cups Doritos, crushed (optional)
Instructions
- Preheat your oven to 350°F and lightly grease a 9×12-inch baking dish.
- Press the crescent roll dough evenly into the bottom of the dish, sealing any seams. Bake the dough for about 8 minutes, just until slightly set.
- While the crust bakes, add the shredded rotisserie chicken to a large mixing bowl.
- Season the chicken with the taco seasoning and stir to coat evenly. Add the drained Ro-Tel, drained corn, cream of chicken soup, chive & onion cream cheese, diced green bell pepper, and most of the sliced green onions. Mix everything together until well combined.
- Spoon the mixture evenly over the baked crescent dough.
- Drizzle ⅓ cup enchilada sauce over the top and then sprinkle the crushed Doritos evenly over the casserole, if using. Top everything with the shredded cheese.
- Return the dish to the oven and bake for 20 minutes, or until hot and bubbly and the cheese is fully melted.
- Remove from the oven and garnish with the reserved green onions before serving.
