Equipment
- 1 Large Skillet
- 1 small mixing bowl
Ingredients
Chicken Sandwiches
- 4 thin chicken breast cutlets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- 4 brioche buns
- Shredded iceberg lettuce
- Butter, for toasting the buns
Creamy Pepperoncini Sauce
- ½ cup mayonnaise
- 2 tablespoons finely chopped pepperoncini
- 1 tablespoon pepperoncini juice
- 1 tablespoon grated Parmesan cheese
- ½ teaspoon garlic powder
- Small squeeze of fresh lemon juice
- Black pepper, to taste
Instructions
- In a small bowl, stir together the mayonnaise, chopped pepperoncini, pepperoncini juice, Parmesan, garlic powder, lemon juice, and black pepper. Mix until smooth and refrigerate while you cook the chicken.
- Pat the chicken cutlets dry with paper towels. Season both sides with garlic powder, paprika, onion powder, salt, and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes per side, depending on thickness, until golden brown and the chicken reaches an internal temperature of 165°F.
- Transfer the cooked chicken to a plate and let it rest for a few minutes.
- Lightly butter the cut sides of the brioche buns. Place them cut-side down in the same skillet and toast until golden brown.
- Spread the creamy pepperoncini sauce generously over the bottom buns. Add a chicken cutlet, followed by a generous handful of shredded iceberg lettuce. Add more sauce, then top with the toasted bun.
- Serve immediately while the chicken is warm and the buns are toasted.
