Chili with Queso
Hi, I’m Brooke! You have probably seen me on Social Media as Meals and Munchies. I’m a busy stay at home mom who loves sharing easy, family-friendly meals that come together fast—because let’s be honest, we don’t always have time for complicated. Whether you’re chasing toddlers, working from home, or just trying to get dinner on the table after work without a fuss, you’re in the right place. Meals and Munchies is where I share real-life recipes that are quick, comforting, and made with ingredients you probably already have in your kitchen. Easy recipes for every day life- let’s get cooking!Whether you’re juggling naptime, homework, or just trying to make it to bedtime with dinner on the table, these easy recipes are here to save the day. No fancy techniques, no complicated ingredients—just real-life meals you can make fast, with minimal stress and maximum flavor. Because easy doesn’t mean boring! These recipes are all beginner friendly and are so easy, anyone can make them! In fact, I often do them with a baby in my arms. This hearty Chili with Queso is the ultimate comfort food — a rich, flavorful chili loaded with ground beef, pinto beans, tomatoes, and the perfect kick of seasoning, all finished with a creamy homemade queso cheese sauce. Whether you make it classic-style or add rotini pasta for a fun twist, this easy one-pot meal is guaranteed to satisfy the whole family. Made with pantry staples like chili seasoning, condensed tomato soup, and beef broth, this recipe comes together in under 30 minutes and delivers restaurant-quality flavor with minimal effort. The addition of smooth, cheesy queso takes traditional chili to the next level — think of it as a cross between chili and mac and cheese! Perfect for weeknight dinners, tailgates, or cozy weekends, this creamy queso chili reheats beautifully and can even be made ahead for meal prep. Serve it with cornbread, tortilla chips, or a sprinkle of shredded cheese on top for the ultimate comfort meal.
Equipment
- 1 Large pot
- 1 Small Saucepan, to make the queso
Ingredients
- 1 lb Ground Beef
- 1/2 Medium White Onion, chopped
- 2 (15oz) cans Pinto Beans
- 1.25 oz packet Chili Seasoning
- 10.5 oz can Condensed Tomato Soup
- 14.5 oz can Petite Diced Tomatoes
- 2 (14.5oz) cans Beef Broth, *Just one can if not using pasta
- 2 cups Dry Rotini Pasta, if using pasta
- 1 cup Evaporated Milk
- 1 tbsp Taco Seasoning
- 1 1/2 cups Shredded Colby Jack
Instructions
- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft. Drain excess fat if needed.
- Stir in the pinto beans, chili seasoning, condensed tomato soup, and diced tomatoes.
- With pasta: Add 2 cans of beef broth and 2 cups of dry rotini pasta.
- Without pasta: Add 1 can of beef broth only.
- Bring the mixture to a simmer, then reduce heat to medium.
- Cook for 15–20 minutes, stirring occasionally, until the pasta is tender (if using) and the chili has thickened.
- To make the queso: In a small saucepan, heat the evaporated milk and taco seasoning over medium heat until hot (but not boiling). Gradually add the shredded Colby Jack cheese, stirring constantly until melted and smooth.
- Stir the queso into the chili to taste — start with a little and add more if you like it extra cheesy.
- Ladle into bowls and top with your favorite garnishes — shredded cheese, sour cream, or green onions. Enjoy!
