Chicken Sausage with Rice

Brooke Stepp
Another Dump and Bake recipe that is healthy but also very fast, and easy, to make. Perfect for those evenings when you're strapped for time or too tired, but you can still feel happy that you made a healthy choice.

Equipment

  • 1 9×12 baking dish

Ingredients

  • 2 tbsp Butter Steakhouse Seasoning
  • 2 cups White Minute Rice
  • 2 cups Low Sodium Chicken Broth
  • 1 cup Cherry Tomatoes
  • 2 cups Spinach
  • 10.5 oz can Rotel
  • 8 oz Cream Cheese
  • 11 oz Smoked Chicken Sausage

Instructions

  • Preheat your oven to 350F.
  • Grease a 9×12 baking dish.
  • To your greased dish, add rice, broth and seasonings. Mix well.
  • Add in tomatoes, spinach and Rotel. Smooth over the top but do not fully mix. We want to make sure the rice stays covered by the liquid.
  • Top with a block of cream cheese and sliced smoked sausage. I seared my sausage beforehand but that is optional.
  • Bake at 350F for 20 minutes.
  • After 20 minutes, mix it and then cook for 10 more minutes.
  • Stir before serving.
