Equipment

  • 9×12 baking dish

Ingredients

  • 1 cup Minute Rice
  • 1 cup Chicken Broth
  • 1 cup Baby Tomatoes, halved
  • 2 cloves Garlic, minced
  • 1-1½ lbs Thinly Sliced Chicken Breast
  • Seasonings of your choice
  • 1 cup Shredded Cheese
  • 8 oz Fresh Mozzarella Sliced (6 slices or so)
  • 2 tbsp Balsamic Glaze or Balsamic Vinegar
  • Basil Leaves

Instructions

  • Preheat the oven to 375°F and lightly grease a 9×12-inch baking dish.
  • Add the Minute rice, chicken broth, baby tomatoes, and minced garlic to the baking dish. Stir everything together until evenly combined.
  • Season all of this however you like.
  • Lay the thin sliced chicken breasts evenly over the rice mixture.
  • Once again, season the chicken however you like (salt, black pepper, garlic powder, and Italian seasoning is a good choice if you don't have a preference).
  • Cover the baking dish tightly with aluminum foil and bake for 35 minutes, or until the chicken is cooked through and the rice is tender.
  • Remove the foil and sprinkle the shredded cheese evenly over the top.
  • Add the sliced fresh mozzarella evenly across the dish.
  • Return the dish to the oven uncovered and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  • Drizzle the balsamic glaze or balsamic vinegar over the top and sprinkle with fresh basil before serving.
  • Serve warm and enjoy!
