Equipment
- 1 skillet
- 1 9×12 baking dish, greased
Ingredients
- 1 lb Lean Ground Beef
- 2 tbsp Taco Seasoning, 1 packet
- 8 oz container Greek Yogurt
- 1 cup Enchilada Sauce
- 2 cups Shredded Mexican Blend Cheese
- 4 Flour Tortillas, taco sized
- 2 Green Onions, optional
- Sour Cream, optional
Instructions
- In a large skillet over medium-high heat, brown the ground beef until no longer pink. Drain excess grease if needed.
- Stir in the taco seasoning until the beef is well coated. Reduce heat to low and mix in the Greek yogurt and ⅓ cup enchilada sauce.
- Stir in 1 cup of shredded Mexican cheese until melted and combined. Let it sit for 3–5 minutes to thicken slightly.
- Preheat oven to 375°F (190°C). Grease a 9×12-inch baking dish. Arrange tortilla halves across the bottom, flat side against the edges, to fully cover the base.
- Spread the beef mixture evenly over the tortillas. Add another layer of tortilla halves on top. Pour the remaining enchilada sauce over the tortillas, then sprinkle the remaining 1 cup shredded cheese.
- Bake uncovered for 15 minutes, or until the cheese is melted and bubbly.
- Let rest for 5 minutes before slicing. Garnish with sliced green onions and a drizzle of sour cream if desired.

Thank you for the recipe! This was so easy and delicious. I was craving Taco Bell and this hit the spot. I think next time I’ll add refried beans to add some bulk.

Love this recipe! Since you posted this one on Instagram, I’ve made it 3 times already. So good and so easy. @madisonsgann
This has been an immediate favorite for my husband and I. I’ve made this at least 4 times and have tried a few different things. One time I added a layer of refried beans, and the last few times I’ve made it I add one of those 90 second bags of rice. It’s so good! @francescadossantoslowery
I am planning on making this tonight but doubling it and doing 2-layers, so it’ll feel more like a lasagna lol
Love this and have made it twice. Family gives it a big thumbs up!!
I add drained black beans, corn and rotel tomatoes to mine.
